Chili Lime Tilapia

This may sound difficult, but it's really easy and looks very elegant when finished.  So gather the ingredients and let's cook!

  • 1 Tbl. Chili Powder
  • 1 tsp. Chipoltle Chili Powder
  • 1 tsp. Smoked Paprika
  • Juice of 1 lime
  • 2 Tbl. Olive Oil
  • 4 Tilapia filets

Mix the powders and olive oil into the lime juice.
Taste and add more spices if necessary.

Spray a baking dish with non-stick spray.  Place the filets in the baking dish and spoon the chili lime oil all over the filets.  At the last minute, I added in some dried cilantro--people either love it or hate it, so use your own discretion.  I think it adds nice color and flavor!

Cover the baking dish with foil and place in a 400 degree pre-heated oven for 10 minutes.  After 10 minutes, remove the cover and broil at 500 degrees for another 2 - 5 minutes.  Watch closely so the fish doesn't burn.
It should flake nicely when done.

Oh my, flaky yummy goodness!

Along with the Talapia, we had a creamy coleslaw and green peas.  Yes those are from  a can my friends, but hey, we like peas plus that I was out of the frozen ones!

This dinner comes together in about 30 minutes, seriously!
Rachel Ray ain't got nuthin' on me.
Enjoy friends!
